ROYAL CHEF: South Cotabato’s growing local food finds

Mindanao is one of the best places to be. In terms of livelihood, culture, people and of course, food finds. And South Cotabato is no exception.

Alice Best began providing for delectable locally concocted condiments since 2012. Alicia Aguipo, 59, is the brains behind the brand, began with a P10,000-peso capital wherein 5 months after, she was invited by Barangay Saravia’s barangay council as they have seen the potential in her products. Of which, Koronadal City Mayor Peter Miguel later on helped her further her business. Nowadays, Alice Best is a staple dining favourite at home or restaurants in the city.

Her products are fermented vinegar based. With the many coconut trees around, it’s no wonder that a bottle of fermented native vinegar is her choice. Despite Mindanao being a large agriculture haven, fermented vinegar is not easily made available in stores. Mostly in provinces, yes.

Her product line includes bottles of Ilonggo style Langkawas Sinamak made of pure coconut juice and pairs perfectly well with grilled dishes. Also available are are bottles of freshly made Tuna Bagoong (fermented fish) with Sinamak of fish innards, spices and fermented vinegar. She also has Tuna dayok with Sinamak (Visayan style vinegar with tuna innards).

Nowadays, nearby provinces and cities hoard her products. Many of which re-sell and export her products to family and friends residing abroad. And with the holidays just a stone throw away, her products are nothing but ideal gifts to an even fruitful year ahead.
