In a span of three years, since we last interviewed her, Davao-based cake artist, Marie Mae Tacugue of Cupcake Couture, has redefined her career objectives to not only include new sweet offerings, but also to connect with the community by sharing her talents through a series of baking and pastry decorating classes.
“It’s fulfilling to be able to meet women from different walks of life, exploring the art of cake decorating and actually loving it,” Marie beamed. “I, for one, know how this kind of sweet discovery gives you that sort of a sugar high, if I may say so. My own foray into baking and becoming a cake artist all stemmed from lots of self-study and research. As a mom and entrepreneur, I want to foster learning within the community, to open doors for fellow homemakers to explore the many possibilities of this kind of edible art — whether it’s for business, leisure or pleasure.”
“I started teaching in March 2016, beginning with a 3D gravity defying cake class. At that time in Davao, it was rare that you’d find classes offered on constructing a 3D gravity defying cake. You’d find them mostly in Manila. So, a baker and cake artist friend of mine offered to collaborate with me by using her place as a venue for the class. Then, the rest is history.”
“I now offer different types of decorating classes from cakes, cupcakes making different sugar flowers, cake pops, sugar cookies, rice krispy treats, French macarons, and, the latest, cakesicles. I also have a workshop on the basics in putting together a dessert table.”
Cakesicles are cake crumbs mixed with frosting, such as buttercream or chocolate ganache, shaped in a popsicle mold and dipped in melted chocolate or candy coating.
“Cakesicles are easy to assemble, handle, decorate and transport,” she added. “The decorating possibilities are endless. They make for a unique and delectable giveaway for any kind of event.”
