Thai curry goes full circle

Yellow, Red, Green and Panang Platters headline Curry Food Festival at Krua Thai.
Krua Thai – Authentic Thai Cuisine Davao prepared four curry platters to feature this month’s curry food festival such as yellow, red, green and panang curry.
The yellow curry is usually richer and creamier than other Thai curries, since coconut cream is used in addition to coconut milk. This is done to tone down the spiciness. The primary spices in yellow curries  are  cumin,  coriander,  turmeric,  fenugreek,  garlic,  salt,  bay leaf,  lemongrass,  cayenne pepper,  ginger,  mace and cinnamon. Sometimes a touch of cane sugar or a similar sweetener will be added, usually depending on the sweetness of the coconut milk. The Thai yellow curry platter is served with chicken, prawn, pork and beef. This platter is priced at P339.00 only.
The red curry is a popular Thai dish consisting of curry paste to which coconut milk is added. The base is properly made with a mortar and pestle, and remain moist throughout the preparation process. The main ingredients are garlic, shallots, (dried) red chillies,  galangal,  shrimp paste,  salt,  kaffir lime peel, coriander root, coriander seeds,  cumin seeds,  peppercorns  and  lemon grass. Common additives are fish sauce, sugar, Thai eggplant,  bamboo shoots,  and thai basil (bai horapha), the red curry platter consist of chicken, beef, pork and squid. This platter is priced at P299.00 only.
The Green curry  is a variety of curry in Thai cuisine. The name “green” curry derives from the color of the dish. Other Thai curry dishes are identified solely by their colors, such as yellow and red curry. Green curries tend to be as hot as red curries, both being hotter than panang curries. However, green curries, regardless of heat, have a definite and desired sweetness that is not usually associated with red curries. Green curry platter consists of beef, pork, and chicken and fish fillet. This platter is priced at P279.00 only.
Lastly, the panang curry is milder than other Thai curries. It traditionally includes dried chili peppers,  galangal,  lemongrass,  coriander root, coriander seeds,  cumin seeds,  garlic, and salt, and sometimes also shallots, peanuts, and shrimp paste.  A platter consists of beef, pork, and chicken and fish fillet. This platter is priced at P279 only.
