A Taste of Southeast Asia: Halal Cuisine in Davao

A vibrant medley of spices, colors, and cultural influences filled the table as guests took part in a flavorful journey across Southeast Asia during the “A Taste of Southeast Asia” halal culinary showcase at the Waling Waling Café of Acacia Hotel Davao.

More than a dining experience, the event unfolded as a sensory celebration of heritage and inclusivity, highlighting Muslim-friendly cuisine thoughtfully prepared to reflect the diverse culinary traditions of the region.

The showcase also underscored the hotel’s recognition by the Department of Tourism (DOT) as a Muslim-Friendly Accommodation Establishment, strengthening its commitment to inclusive hospitality and culturally sensitive service.

From appetizers to desserts, guests experienced a carefully curated selection crafted through the collaboration of Nestlé Consultant Chef Tahir Malikol and Acacia Executive Sous Chef Joel Cunanan, together with the hotel’s culinary team in partnership with Nestlé Philippines.

The menu brought together inventive interpretations of regional classics, including Shrimp Sambal Tartlet with Coconut Lime Foam, Arabian Beef Kabsa with Roasted Nuts, Chicken Rendang paired with Pandan Risotto and Tamarind Glaze, and Butter Masala Fish Curry. Sweet finishes such as Rose Pistachio Milk Pudding and Cardamom Mango Kulfi rounded out the experience.

Acacia Hotel Davao resident manager Daffodil Martinez-Bahani emphasized that the event goes beyond gastronomy, serving as a platform for cultural appreciation and inclusivity.

Bahani noted that the collaboration with Nestlé Philippines added depth to the culinary showcase, allowing each dish to reflect stories of heritage, identity, and connection.

With its blend of authentic Southeast Asian flavors and modern culinary artistry, the showcase reaffirmed a simple truth: food is more than sustenance it is a bridge that connects cultures, celebrates diversity, and brings people together at one table.
