THE ROYAL CHEF: Elegant dining at Cafe Clarice

Elegance is not just being noticed; elegance is about being remembered. And a recent gastronomic adventure in Davao city proved to be one for the books. At Cafe Clarice, you’d end up noticing some things and remembering everything.

Cafe Clarice is C-Tree Hotel’s in-house restaurant. Offering a spectrum of fusion dishes (Asian and Western), this quaint cafe exudes elegance with the dishes they offer. Executive Chef Sam Barbadillo, Australian-trained and Clarice’s nephew, playfully creates masterpieces that’s both familiar and new to the palate. Together with him are his kitchen brigade that are as passionate and imaginative as him — Jul Baliwan, Mayumi, Mardion de Paz and Tom del Rosario.

On the menu were dishes that speaks of culture and flavours. Experience a multitude of flavour combos with their bowl of creamy cauliflower soup with homemade bread. You can always dip the bread for an added depth. Dive into a plate of crunchy tuna tartar that’s nakedly balanced. Certified Asian is what a plate of prawns ceviche is — the combination of green mango, pomelo and dill highlights the rich prawns altogether.

Something familiar? Indulge your palates to a plate of creamy california maki salad to excite your senses. Go on a Thailand adventure with their hefty serving of minty Thai beef salad.

Who said main courses need not be fancy? Again, Chef Sam and his pool of talented kitchen brigade created a number of mains that’s sure to lit your sense. Choose from chicken teriyaki, grilled chicken or crispy pork belly for the meaty eater in you. Goes well with a slab of their homemade mixed mashed potato and roasted veggies. The pureed snow peas also is a revelation — buttery sweet, it’s like a little piece of heaven on your plate.

Dessert was literally the bomb. Melting white chocolate domes drizzled with hot dark chocolate is just something you cannot say no to. Not to mention, the delectable fruit slices inside the dome that contradicts and balances the sweetness of the chocolates as you take a bite. Everything about this dessert speaks of Davao — from the chocolates used to the fruit slices, it very well represents the abundance of the city’s local produce.
