True, one need not cook fancy; just good food from fresh ingredients — locally grown fresh produce, that is. And Tradisyon Pinoy Comfort Food restaurant at the renowned Azalea Hotels and Residences Baguio does just that.

Tradition, a noun, means the transmission of customs or beliefs from generation to generation. Tradisyon, spelt in Tagalog, is of the same meaning. Nevertheless, in Azalea Baguio, it means a haven of traditionally prepared and cooked dishes served with the freshest ingredients Baguio city has to offer.

In focus are house specialties that never fails to make any dining experience memorable. Not to mention, every dish served is guaranteed fresh and deliciously reminiscing of memories. Stepping inside this rustically laden restaurant is like stepping into a log cabin that’s modern yet reeks with Filipino tradition. With it’s wide open space, the restaurant is truly perfect for an any day munching with family or friends. Not to forego the beautiful landscape view of the outside that’s embracingly warm to the senses.

Staycations are never complete without some hefty breakfast servings of sweet and savoury wake-me-uppers. Whether you are a afan of pancakes, breads, sausages or toasts, at Tradisyon, you’d be spoiled up until the last crumb. They have a chicken mami and porridge station, selection of freshly baked breads, Pinoy breakfast staples, an egg section and a dessert for breakfast section. One thing you should not miss is their cup of thick hot chocolate. This one is so lit you’d not know when to stop.

Tradisyon has it covered. Enjoy a smorgasbord of international flavours every night of week. Go Mexican on Wednesdays, Mongolian choices on Thursdays, Chinese Hot Pot session on Fridays and a Pizza, Pasta & Salad buffet on Saturdays. Weekend Brunch Specials available on Fridays to Sundays.

Executive Chef Bryan Gorgonio: Chef in Focus

For someone who did not grow up in Baguio, Chef Bryan is one force in the kitchen to be reckoned with. His skills and experience are but an attestment to his passion and love for creating dishes that highlight the culture and tradition of the place he is in. Case in point, Tradisyon Pinoy Comfort Food restaurant at the Azalea Baguio.

He began his journey with them November of 2016. Since then, he has imposed a major facelift on their existing menu — giving it a more traditionally Filipino flare. The result? A restaurant that caters to the many flavours of the archipelago under one roof.

“Before, I was in Boracay working for a different hotel for 3 years.”, Chef Bryan said. “The reduction on the menu was inevitable; it was was done in order to align the dishes to what the restaurant is all about.”, he added. Case in point, previous menu was packed but did not have a distinguishing taste or dish.

Best sellers include Bulasing (flavours of bulalo and spunk of sinigang in one bowl), Crispy Pata Duo (in Tradisyon, when you order Crispy Pata, you get the crunchy crispy pata pieces alongside their nutty kare-kare sauce), sinigang na bagnet (soupy and crunchy at the same time) and dessert of crunchy fried ube dumplings with strawberry sauce, moist carrot cake and milky tres leches filled with ube and strawberry jam.

Asked of his personal favourite? Chef Bryan enthusiastically said that he loves the creamy and melt-in-your-mouth goodness of their lengua ala mode. True enough, the dish is creamy, soft and bursting with flavour combinations.

Tradisyonis all about celebrating life through the many abundance surrounding us. When in town, do drop by. Everything on their menu will truly make your stay in Baguio a most memorable one. Also try their savoury Adobo with crispy banana chips, crunchy sauteed fresh vegetables, flavourful pinakbet and rich molo soup.

Tradisyon Pinoy Comfort Food is located at the Azalea Hotels and Residences Baguio Leonard Wood Loop, Brgy. M. Roxas, 2600 Baguio City. It is open from 6am to 10pm with a breakfast buffet from 6am-10am.
